Mercury
All around the hamlet of Touches, on the heights of Mercurey, the estate's vines have grown up since the end of the 18th century. In 1997, Manu Bautista took over from his father-in-law Jacques Tupinier at the head of the estate, and found a beautiful balance between ancestral goodness and modernity.
The agriculture is sustainable, the harvest is manual, and great attention is paid to the grapes: picked at optimal maturity, sorted on the vine then on the table, in order to bring only the most beautiful fruits to vinification. Since 2016, the wines – only in Mercurey – have been aged in the new vat room dug into the rock, which benefits from both the latest technologies and the know-how of the winemaker.
